Chocolate Chip Banana Bread

Banana bread seems to be a family staple for most people I have been talking to lately! There are so many different variations and really great recipes that have been passed down from generation to generation. There are also a lot of great recipes that are adding interesting ingredients to make the breads a little healthier. This is one recipe I tried out recently and was very happy with the result! I hope you give it a try and let me know what you think!

The middle of my banana bread fell because I dropped it halfway through cooking! Yeah, I couldn't wait long enough to get a good sniff! 

Ingredients:

3 very ripe bananas
6 oz of zero, or low fat yogurt
1 tbsp butter or margarine
1 whole egg
1 1/2 cups whole wheat flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 cup brown sugar
1/2 cup sugar
1 tsp vanilla
1/3 - 1/2 cup of dark chocolate chips + a handful for the top of the bread

Directions:

Set oven to 325ºF and spray a large loaf pan with a non stick cooking spray.
In a small bowl, mash up bananas using a fork and set aside.
In a large bowl, cream together butter, yogurt, vanilla and both sugars.
Add in the egg and mashed banana and mix on medium speed for about 2-3 minutes.



In a separate bowl, combine whole wheat flour, salt, baking powder and baking soda and gently mix.


Add dry ingredients to wet ingredients and mix together until blended, but be sure not to over mix.



Fold in chocolate chips to mixture.



Pour mixture into greased loaf pan and sprinkle with remaining chocolate chips.



Bake for 30-35 minutes or until a cake tester inserted into the middle of the loaf comes out clean.


Serve warm with some butter! Mmmmmmmm! Enjoy!
