The middle of my banana bread fell because I dropped it halfway through cooking! Yeah, I couldn't wait long enough to get a good sniff! |
Ingredients:
3 very ripe bananas6 oz of zero, or low fat yogurt
1 tbsp butter or margarine
1 whole egg
1 1/2 cups whole wheat flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 cup brown sugar
1/2 cup sugar
1 tsp vanilla
1/3 - 1/2 cup of dark chocolate chips + a handful for the top of the bread
Directions:
Set oven to 325ºF and spray a large loaf pan with a non stick cooking spray.In a small bowl, mash up bananas using a fork and set aside.
In a large bowl, cream together butter, yogurt, vanilla and both sugars.
Add in the egg and mashed banana and mix on medium speed for about 2-3 minutes.
In a separate bowl, combine whole wheat flour, salt, baking powder and baking soda and gently mix.
Add dry ingredients to wet ingredients and mix together until blended, but be sure not to over mix.
Fold in chocolate chips to mixture.
Pour mixture into greased loaf pan and sprinkle with remaining chocolate chips.
Bake for 30-35 minutes or until a cake tester inserted into the middle of the loaf comes out clean.
Serve warm with some butter! Mmmmmmmm! Enjoy!
